 Indian Cuisine consists of a variety of regional and traditional cuisine native to the indian subcontinent .indian dishes are commmon in more than one region of india , with many vegetarian and vegan dishes . some ingredients commonly found in indian dishes include: rice, wheat ,  ginger, green chillies and species .indian cuisine has shaped the history of international relations;the spice trade between India and Europe was the primary catalyst for Europe's Age of Discovery .Spices were bought from india and traded around Europe and Asia .food of india are better known for its spiciness. throughout india, be it north india or south india, spices are used generously in food . but one must one forget that every single used in indian dishes carries some or that other nutritional as well as medicinal properties .food in the north india , to begin with , kashmiri cuisines reflect strong central asian influences . In kashmir , mostly all the dishes are prepared around the main course of rice found abundantly in the beautiful valley . another delicious item cooked here is the "saag"that is prepared with a green leafy vegetable known as the "hak"
